A delicious and hearty stew combining tender pork tenderloin and vegetables. Perfect for family dinner!
Preparation Time: 1 hour
Serving Size: 4-6

Ingredients:

- ½ kg pork tenderloin
- 7 dl diced rutabaga
- 7 dl diced carrots
- 1 large onion
- 2 garlic cloves
- 2 tablespoons oil
- 5 dl chicken broth
- Salt and pepper to taste
- Fresh parsley for garnish

Instructions:

1. Peel and chop the onion and garlic.
2. Cut the pork tenderloin into 2-3 cm thick slices.
3. Heat the oil in a large pot and add the onion and garlic. Sauté for a few minutes.
4. Add the pork tenderloin and brown on all sides.
5. Add the diced rutabaga and carrots to the pot. Stir well.
6. Pour the chicken broth over the mixture and season with salt and pepper.
7. Let the stew simmer on low heat, covered, for about 30-40 minutes until the vegetables are tender and the meat is cooked through.
8. Garnish with fresh parsley before serving.
