A delicious and nutritious vegetable pasta that can be prepared quickly and is loved by the whole family. Perfect for a weeknight dinner.

Ingredients:
- 300 g pasta (such as spaghetti or penne)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 150 g spinach
- Salt and pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain and reserve a little cooking water.
2. Heat olive oil in a large skillet over medium heat. Add the onion and sauté for about 3 minutes.
3. Add the crushed garlic, bell pepper, and zucchini to the skillet. Cook until the vegetables soften, about 5-7 minutes.
4. Add the cherry tomatoes and spinach to the skillet. Cook for a few more minutes until the spinach has wilted.
5. Stir the cooked pasta into the vegetable mixture. Add a little reserved cooking water if needed to moisten. Season with salt and pepper.
6. Serve the pasta on plates and sprinkle with grated Parmesan cheese if desired.
