Pork Tenderloin with Jaloviina-Mustard Sauce

A tender and flavorful pork dish, perfect for grilling or pan-searing, served with a sauce made from jaloviina and mustard. An ideal treat for summer gatherings! Preparation Time: 30 minutes

Ingredients:
- 600 g pork tenderloin (outer or inner)- 2 tbsp mustard
- 2 tbsp jaloviina
- 2 dl cream
- White pepper
- Pink pepper
- Black pepper
- Salt
Instructions:
1. Bring the pork to room temperature and flatten it to a thin cut. Season with salt.2. Crush all the peppers using a mortar and pestle or a grinder.
3. Grill the pork until nearly cooked through.
4. In a pan, combine the cream, jaloviina, and mustard. Bring to a boil and simmer until slightly thickened. Season with salt.
5. Brush one side of the pork lightly with mustard and generously sprinkle with the mixed peppers.
6. Place the pork into the sauce and spoon the sauce over it. Simmer on very low heat for about 5 minutes.
7. Serve with boiled rice, if desired.
