Pork Chops with Bean and Vegetable Stew

Ingredients

- 4 pork chops
- 2 tsp thyme
- ½ tbsp all-purpose flour
- 1 tbsp veal stock
- 2 dl beef broth
- 1 can brown beans
- 2 tbsp mango chutney for topping
- 170 g fresh mushrooms
- ½ tsp salt
- ½ tsp ground black pepper
Vegetable Stew:
- 1 leek
- ½ dl water
- 1 tbsp oil
- 1 red bell pepper

Instructions

1. Prepare the vegetable stew: Slice the leek and bell pepper. Heat the oil in a pan, then add the leek and bell pepper. Sauté briefly.
2. Add the water and simmer the vegetables until they are soft.
3. Season the vegetable stew with thyme, salt, and black pepper. Stir in the brown beans and mix well.
4. Pat the pork chops dry and coat them in all-purpose flour.
5. Sear the chops in a pan on both sides until browned. Add the veal stock and beef broth to the pan. Cook on low heat for about 15 minutes.
6. Serve the pork chops with the vegetable stew and top with mango chutney. Garnish with chopped parsley if desired.
