Ingredients:

- Sofritto:
- 1 celery stalk
- 1 carrot
- 1 medium onion
- Olive oil
- Butter
- 500 g ground reindeer meat
- 2-3 dl red wine
- 2 tablespoons tomato paste
- Thyme sprigs
- Salt
- Black pepper
- Fresh pappardelle pasta (made from scratch or store-bought)

Instructions:

1. Peel and dice the celery, carrot, and onion into small pieces.
2. Heat butter and olive oil in a pan. Add the diced celery, carrot, and onion. Sauté until the vegetables soften.
3. Add the ground reindeer meat to the pan and brown it well with the vegetables.
4. Pour the red wine into the pan and stir in the tomato paste. Add the thyme sprigs.
5. Allow the sauce to simmer on low heat for about 30 minutes. Season with salt and black pepper to taste.
6. Prepare the fresh pappardelle pasta according to the instructions or use store-bought pasta.
7. Serve the reindeer ragu hot over the pappardelle and enjoy!
