This delightful pasta dish features pappardelle pasta tossed with roasted asparagus, creamy sauce, and a touch of lemon for a refreshing flavor.
Ingredients:
- 250 g pappardelle pasta
- 200 g green asparagus
- 100 ml cream
- 50 g Parmesan cheese
- 1 organic lemon (zest)
- Salt
- Black pepper
- Olive oil
Instructions:
1. Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit).
2. Cut the asparagus into desired lengths and place them on a baking tray. Drizzle with olive oil, sprinkle with salt and black pepper. Roast in the oven for about 15-20 minutes.
3. Cook the pappardelle pasta in salted boiling water according to package instructions until al dente.
4. Drain the pasta, reserving a little cooking water.
5. In a pot, combine the pasta with cream, grated Parmesan cheese, and finely grated lemon zest. Mix well.
6. If the pasta seems too dry, add a bit of reserved cooking water as needed.
7. Gently fold in the roasted asparagus on top of the pasta.
8. Serve immediately, ideally paired with a chilled white wine.
