Poronkäristys with Mashed Potatoes and Lingonberry Jam

A delicious and traditional Finnish dish, served with creamy mashed potatoes and sweet lingonberry jam. Preparation Time: 1 hour

Ingredients:
For Poronkäristys:- 500 - 750 g reindeer meat, sliced
- 1.5 tsp salt
- 3 dl water
- 3 tbsp butter
- Whole black peppercorns (a few)
- Bay leaves (a few, optional)
For Mashed Potatoes:
- 1 kg Lapland fingerling potatoes
- 3 tbsp butter
- 2 - 3 dl milk
- 1 onion
Instructions:
1. Poronkäristys:- Heat a pot and melt the butter.
- Brown the reindeer meat in the butter.
- Add salt and water. Optionally, add bay leaves and black peppercorns.
- Let it simmer on low heat for about 45 - 60 minutes.
2. Mashed Potatoes:
- Peel the fingerling potatoes and boil them in salted water.
- Chop the onion finely.
- Drain the water and mash the potatoes.
- Add the chopped onion, butter, and milk, and mix well.
3. Serving:
- Spoon the mashed potatoes onto a plate and create a small "well" in the center.
- Spoon the reindeer meat mixture into the well and top with sweet lingonberry jam.
