Ingredients:

- 800 g reindeer sirloin
- 2 tbsp olive oil
- Salt to taste
- Black pepper to taste
- 4 garlic cloves, crushed
- 100 g butter
- 200 g pickled mushrooms (e.g., button mushrooms, chanterelles)

Instructions:

1. Take the reindeer sirloin out of the refrigerator and let it come to room temperature for about an hour before cooking.
2. Preheat the oven to 180°C (356°F).
3. Season the sirloin with salt, black pepper, and crushed garlic.
4. Heat the olive oil in a skillet and sear the sirloin on all sides until browned.
5. Transfer the seared sirloin to a roasting pan and roast in the oven for about 1 hour or until the internal temperature reaches 58-60°C (medium-rare).
6. Remove the sirloin from the oven and let it rest under aluminum foil for about 15 minutes before slicing.
7. Melt the butter and mix in the crushed garlic. Serve the garlic butter with the roasted sirloin.
8. Serve the roasted sirloin with pickled mushrooms on the side.
