Serving Size: 4-6 servings
Ingredients:
- 2 large carrots
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 tablespoon liquid smoke
- 1 tablespoon apple cider vinegar
- 1 teaspoon sea salt
- 1 teaspoon sugar
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried dill (or fresh)
- 1/2 teaspoon cold-pressed lemon juice
Instructions:
1. Peel the carrots and cut them into thin strips or slices.
2. In a bowl, mix together the olive oil, soy sauce, liquid smoke, apple cider vinegar, sea salt, sugar, black pepper, dill, and lemon juice.
3. Add the carrot strips to the marinade and mix well to coat them evenly.
4. Cover the bowl with plastic wrap and refrigerate for at least 24 hours to marinate.
5. Serve the carrot salmon on bread, in salads, or in homemade sushi rolls.
