Ingredients:
- 500 g carrots (e.g., purple carrots)
- 1 onion
- 2 garlic cloves
- 1 l vegetable broth
- 2 tbsp olive oil
- Salt and pepper to taste
- 2 tbsp fresh parsley (for garnish)
Horseradish Sauce:
- 2 tbsp grated horseradish
- 1 dl crème fraîche
- 1 tbsp lemon juice
- Salt to taste
Instructions:
1. Peel and chop the carrots, onion, and garlic.
2. Heat olive oil in a pot and sauté the onion and garlic over medium heat until soft.
3. Add the chopped carrots to the pot and pour in the vegetable broth. Cook for about 15-20 minutes until the carrots are tender.
4. Blend the soup until smooth using an immersion blender and season with salt and pepper.
5. Prepare the horseradish sauce by mixing the grated horseradish, crème fraîche, lemon juice, and salt in a bowl.
6. Serve the carrot soup with the horseradish sauce on the side and garnish with fresh parsley.
