Ingredients:
- 1 pomelo
- 1 carrot
- 1 cucumber
- 1 red chili
- 1/4 cup chopped cilantro
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- 1 tablespoon sugar
- 1/4 cup roasted peanuts
Instructions:
1. Peel the pomelo and break the fruit into segments.
2. Peel and grate the carrot.
3. Slice the cucumber into thin rounds.
4. Finely chop the red chili.
5. In a bowl, combine the pomelo, carrot, cucumber, chili, and cilantro.
6. For the dressing, mix together the fish sauce, lime juice, and sugar until well combined.
7. Pour the dressing over the salad and gently toss to combine.
8. Serve the salad topped with roasted peanuts.
