Serving Size: 4 servings
Ingredients:
- 4 large tortillas- 200 g fresh spinach
- 150 g feta cheese
- 1 cup shredded cheese (e.g., mozzarella or cheddar)
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions:
1. Heat olive oil in a frying pan over medium heat. Add the chopped onion and minced garlic, and sauté until they are soft.2. Add the fresh spinach to the pan and cook until it wilts and moisture evaporates. Season with salt and pepper.
3. Remove the pan from heat and crumble the feta cheese into the spinach mixture. Mix well.
4. Place about ¼ of the spinach-feta mixture in the center of each tortilla and sprinkle with shredded cheese. Fold the tortilla in half and cook in the pan for about 2-3 minutes on each side, until the tortilla is golden brown and the cheese is melted.
5. Repeat the process with the remaining tortillas.
6. Serve warm, for example, with a salad.
