Ingredients:
- 600 g wild turkey breast fillets - 2 tbsp olive oil
- 2 cloves garlic, crushed
- 1 tbsp fresh thyme, chopped
- 1 tbsp fresh rosemary, chopped
- Salt and black pepper to taste
- Juice of 1 lemon
Instructions:
1. Preheat the oven to 180°C (350°F). 2. In a bowl, mix together the olive oil, crushed garlic, chopped herbs, salt, pepper, and lemon juice.
3. Rub the mixture over the surface of the wild turkey breast fillets.
4. Place the fillets in a baking dish and pour the remaining marinade over them.
5. Roast in the oven for about 25-30 minutes or until the meat is cooked through and the internal temperature reaches 75°C (165°F).
6. Allow the meat to rest for a few minutes before slicing and serving.
