Serving Size: 4 servings
Ingredients:
- 2 tablespoons olive oil - 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, chopped
- 1 potato, diced
- 1 bell pepper, diced
- 400 g crushed tomatoes
- 1 liter vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 100 g fresh parsley, chopped
Instructions:
1. Heat the olive oil in a large pot over medium heat. 2. Add the chopped onion and minced garlic, and sauté until soft.
3. Add the diced carrots, celery, potato, and bell pepper. Cook the vegetables for about 5 minutes.
4. Pour in the crushed tomatoes and vegetable broth. Stir well.
5. Season with salt, black pepper, and oregano. Bring the soup to a boil.
6. Reduce the heat and let it simmer on low for about 15-20 minutes, until the vegetables are tender.
7. Stir in the chopped parsley just before serving.
