Mango and Marinated Salmon Pinchos

A Basque delicacy combining delicious salmon and sweet mango, perfect as finger food with sparkling wine or wine.
Preparation Time: 3 days + 30 minutes
Serving Size: 10 pinchos

Ingredients:

- 500 g salmon
- 500 g salt
- 500 g sugar
- Olive oil
- 2 mangoes

Instructions:

1. Cut the salmon into evenly sized thick square pieces.
2. Mix the salt and sugar together. Sprinkle the mixture on the bottom of a dish.
3. Carefully place the salmon pieces on top and cover them completely with the remaining salt-sugar mixture.
4. Cover the dish tightly with plastic wrap and refrigerate for 3 days to marinate.
5. Dice the mango into pieces similar in size to the salmon.
6. After marinating, remove the salmon pieces one at a time and rinse off any excess salt and sugar.
7. Alternately thread salmon and mango onto cocktail sticks (salmon-mango-salmon).
8. Arrange the pinchos on a serving platter and drizzle with a little olive oil, preferably lemon-infused.
9. Serve the pinchos with sparkling wine or wine and enjoy!
