Easy Vegetable Pasta

A beautiful and delicious vegetable pasta that comes together quickly, perfect for a weeknight dinner. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (such as spaghetti or fusilli) - 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 zucchini, diced
- 1 red bell pepper, diced
- 200 g cherry tomatoes, halved
- 100 g spinach
- Salt and pepper to taste
- 50 g Parmesan cheese, grated (optional)
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a little cooking water.2. Heat olive oil in a large pan over medium heat. Add the chopped onion and sauté until soft (about 3-4 minutes).
3. Add the crushed garlic and cook for another minute.
4. Add the diced zucchini and bell pepper to the pan. Sauté for 5-7 minutes until the vegetables are tender.
5. Stir in the halved cherry tomatoes and spinach. Mix and cook until the spinach has wilted.
6. Combine the cooked pasta with the vegetables. Add a bit of reserved cooking water if needed to keep it moist. Season with salt and pepper.
7. Serve the pasta topped with grated Parmesan cheese and fresh basil, if desired.
