Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 2 carrots, sliced
- 1 zucchini, diced
- 200 g mushrooms, sliced
- 1 teaspoon fresh ginger, grated
- 1 teaspoon soy sauce
- 1 teaspoon honey or agave syrup
- 100 ml coconut milk
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the chopped onion and crushed garlic. Sauté until softened.
3. Add the bell pepper and carrots, cooking for about 5 minutes until they begin to soften.
4. Stir in the zucchini and mushrooms, cooking for another 5 minutes.
5. Mix in the grated ginger, soy sauce, and honey. Cook for an additional 2-3 minutes.
6. Pour the coconut milk into the skillet and stir well. Let it simmer on low heat for about 5 minutes.
7. Season with salt and pepper. Serve warm, garnished with fresh cilantro.
