A rich and flavorful soup made with fresh mushrooms and cream. Perfect for a comforting meal.
Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 500 g fresh mushrooms
- 1 onion
- 2 garlic cloves
- 4 dl vegetable broth
- 2 dl cream
- 2 tbsp butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Finely chop the onion and garlic.
2. Halve the mushrooms and chop them into small pieces.
3. Melt the butter in a pot and sauté the onion and garlic until soft.
4. Add the mushrooms and cook for about 5 minutes, until they are tender.
5. Pour in the vegetable broth and bring to a boil. Let it simmer for about 10 minutes.
6. Blend the soup with an immersion blender or in a regular blender until smooth.
7. Stir in the cream and season with salt and pepper. Heat the soup again until warm.
8. Serve hot, garnished with fresh parsley. Enjoy!
