Rowan Berry Porridge

A beautifully colored and delicious porridge made from rowan berries, perfect for breakfast or a snack. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 2 cups rowan berries - 1 cup rolled oats
- 4 cups water
- 1 cup milk (or plant-based milk)
- 2 tablespoons honey or sugar (to taste)
- A pinch of salt
- Cinnamon or vanilla for flavoring (optional)
Instructions:
1. Rinse the rowan berries thoroughly and remove any stems. 2. In a pot, boil the rowan berries in water for about 10 minutes until they soften.
3. Blend the berries with an immersion blender or in a regular blender until smooth.
4. Add rolled oats, milk, honey (or sugar), and a pinch of salt to the pot. Mix well.
5. Cook the porridge on low heat for about 10-15 minutes until the oats are cooked and the porridge thickens.
6. Season with cinnamon or vanilla if desired.
7. Serve warm, topped with additional berries and nuts if you like.
