Ingredients:
- 250 g pasta (e.g., spaghetti or fusilli) - 200 ml green beans
- 1 zucchini, diced
- 1 avocado
- 200 ml spinach
- 2 tbsp olive oil
- 2 garlic cloves, crushed
- Salt and black pepper to taste
- Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Add the green beans during the last few minutes of cooking. 2. Drain the pasta and beans, and return them to the pot.
3. Heat olive oil in a skillet over medium heat. Add crushed garlic and diced zucchini. Sauté for about 5-7 minutes until the zucchini is tender.
4. Add spinach to the skillet and sauté briefly until it wilts.
5. In a bowl, mash the avocado until smooth. Stir it into the pasta mixture and combine well.
6. Add the sautéed vegetables to the pasta and season with salt and pepper.
7. Serve warm, optionally garnished with grated Parmesan cheese.
