Swedish Potato Salad

A creamy and tangy potato salad perfect for barbecues or as a side dish. Preparation Time: 30 minutes
Serving Size: 4-6 servings
Ingredients:
- 500 g new potatoes
- 1 dl pickles, chopped
- 1 dl red onion, chopped
- 2 dl mayonnaise
- 1 tbsp mustard
- 1 tbsp fresh dill, chopped
- Salt and pepper to taste
Instructions:
1. Boil the new potatoes in salted water until tender but still firm. Drain and let cool.
2. Once cooled, peel the potatoes and cut them into slices or cubes.
3. In a bowl, combine the mayonnaise, mustard, salt, pepper, and chopped dill. Mix well.
4. Gently fold in the potatoes, pickles, and red onions into the mayonnaise mixture, being careful not to mash the potatoes.
5. Cover the salad and let it chill in the refrigerator for at least one hour before serving.
6. Serve the potato salad alongside grilled sausages or fish. Enjoy!
