A delicious alternative for busy days, these potato rissoles are filled with flavorful smoked salmon. Preparation Time: 30 minutes

Ingredients:
- ½ kg potatoes (cooked) - 2 dl barley flour
- 1 tsp salt

Salmon Filling:
- 1 packet cold smoked salmon - ½ red onion
- 1 dl sour cream
- 1 tbsp fresh dill (chopped)
- Black pepper to taste
Instructions:
1. Peel and mash the cooked potatoes in a bowl. 2. Add the barley flour and salt to the potato mash. Mix until you have a smooth dough.
3. Divide the dough into four parts and shape them into round patties.
4. Fry the patties in a hot pan until golden brown on both sides (about 3-4 minutes per side).
5. Prepare the salmon filling: chop the red onion and mix it with the smoked salmon, sour cream, and dill. Season with black pepper.
6. Fill the potato rissoles with the salmon mixture and serve immediately.
