A hearty and flavorful stew made with potatoes, leeks, and bell peppers. Perfect for a comforting meal.

Serving Size: 2-3 servings
Ingredients:
- 180 g (4-5) potatoes
- 1 leek
- 250 ml vegetable broth
- 1 red bell pepper (or green)
- 50 ml chopped parsley
- Salt and pepper to taste
- Oil for frying
Instructions:
1. Peel and dice the potatoes.
2. Rinse the leek and slice it into thin rings.
3. Rinse the bell pepper, remove seeds, and chop into cubes.
4. Heat oil in a pot over medium heat and add the leek. Sauté until it becomes soft.
5. Add the diced potatoes and bell pepper to the pot, and stir well.
6. Pour the vegetable broth into the pot and season with salt and pepper.
7. Let the stew simmer on low heat for about 20-25 minutes, or until the potatoes are tender.
8. Stir in the chopped parsley just before serving.
9. Serve warm.
