A traditional Finnish dish featuring slowly braised beef in a tangy dill sauce, perfect for a comforting weekend meal.

Serving Size: 6 servings

Ingredients

- 1½ kg beef brisket or flank
- 2 carrots
- 1 onion
- 1 bay leaf
- 2-3 allspice berries
- A pinch of salt
Dill Sauce:
- 5-6 dl beef broth
- 3 tbsp butter
- 3 tbsp all-purpose flour
- Juice of 1 lemon or 2-3 tbsp vinegar
- 2-3 tsp sugar
- Salt to taste
- White pepper to taste
- 1 bunch of fresh dill

Instructions

1. Place the beef in a pot and cover it with cold water, enough to just about submerge the meat. Bring to a boil and skim off any foam that forms on the surface.
2. Reduce the heat to low and let the meat simmer with the lid on.
3. Peel the carrots and onion, then chop them roughly. Add the vegetables to the pot along with the spices and a pinch of salt. Let it simmer gently for 3-3½ hours, until the meat is tender.
4. Remove the meat from the broth, cut it into bite-sized pieces, and set aside for the dill sauce.
Dill Sauce:
1. Rinse the fresh dill and allow it to dry.
2. In a pot, melt the butter, then add the flour and cook for about five minutes without letting it brown, stirring continuously.
3. Gradually pour the beef broth through a strainer into the pot, adding it one ladle at a time while stirring until the sauce is thick and smooth.
4. Add the meat, vinegar, and sugar to the sauce, and simmer gently for about five minutes. Taste and adjust seasoning if necessary.
5. Chop the dill finely and stir it into the sauce just before serving.
Serve the dill beef with boiled potatoes and a fresh salad.
