Ingredients
- 1 large onion - 1 package of bacon
- 2 cups heavy cream
- Goat cheese (for topping)
- Fresh basil (for topping)
- 2-3 tablespoons tomato paste
- 1 beef broth cube
- 2 cans crushed tomatoes
- Salt (to taste)
- 2 tablespoons ketchup
Instructions
1. In a pan, sauté the chopped bacon and diced onion until the bacon is crispy and the onion is translucent. 2. In a pot, combine the crushed tomatoes and tomato paste.
3. Add the sautéed bacon and onion to the pot.
4. Stir in the beef broth cube and salt to taste.
5. Let the soup simmer for about 15 minutes.
6. Mix in the heavy cream and allow it to heat through.
7. Serve the soup topped with goat cheese and fresh basil.
