Ingredients:

- 500 g Jerusalem artichokes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper

Instructions:

1. Preheat the oven to 175°C (350°F).
2. Wash the Jerusalem artichokes thoroughly with a brush.
3. Cut the artichokes into wedges, approximately two to six pieces depending on size.
4. Place the wedges on a baking sheet and drizzle with olive oil. Rub the oil into the wedges with your hands.
5. Roast the wedges in the oven for about 20 minutes.
6. Meanwhile, mix together the salt, garlic powder, smoked paprika, and black pepper.
7. Sprinkle the spice mixture evenly over the artichokes and roast for an additional 15–20 minutes until they are crispy on the edges.
8. Serve with aioli and enjoy!
