A delicious Spanish potato omelette, perfect as a tapa or main dish.
Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- Olive oil
- 6 eggs
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 250 g potato and onion mix
Instructions:
1. Heat olive oil in a frying pan over medium heat.
2. Add the potato and onion mix to the pan and sprinkle a little salt on top.
3. Cook the mixture until the potatoes are tender and soft.
4. In a bowl, whisk the eggs and mix in the potato-onion mixture, salt, and black pepper.
5. Combine everything well.
6. Heat some more oil in a clean pan and pour the egg mixture into the pan.
7. Cook the omelette until it is set on the bottom, then carefully flip it to cook the other side.
8. Cook for a little longer until the omelette is beautifully golden brown.
9. Serve warm.
