Delicious and easy Tex Mex tortilla boats are the perfect choice for a quick weeknight meal or a tasty snack. The fillings can be customized to your liking, and they come together in no time! Preparation Time: 20 minutes

Ingredients:
- Mini tortillas - 200 g ground beef (or chicken)
- 1 dl corn
- 1 dl black beans
- 1 dl shredded cheese (e.g., cheddar)
- 1 small red onion, chopped
- 1 bell pepper, diced
- 1 tsp taco seasoning
- 1 dl salsa
- Fresh cilantro (optional)
- Salt and pepper to taste
Instructions:
1. Heat a skillet over medium heat and add the ground meat. Cook until browned and fully cooked. Season with taco seasoning, salt, and pepper.2. Add the chopped red onion and bell pepper to the skillet. Sauté for a few more minutes until the vegetables are soft.
3. Stir in the corn and black beans. Let them warm through for a moment.
4. Take the tortillas and fill them with the meat mixture.
5. Top with shredded cheese and salsa. Garnish with fresh cilantro if desired.
6. Serve immediately and enjoy!
