A delicious and hearty omelette filled with potatoes and onions, taking you straight to the Basque Country!
Preparation Time: 30 minutes
Serving Size: 4-6 servings
Ingredients:
- 4 medium potatoes
- 1 medium onion
- 6 eggs
- 1 cup olive oil
- Salt to taste
- Black pepper to taste
Instructions:
1. Peel and slice the potatoes thinly.
2. Peel and chop the onion into small cubes.
3. Heat the olive oil in a large skillet over medium heat.
4. Add the potatoes and onion to the skillet. Cook until the potatoes are soft and slightly golden, about 15-20 minutes, stirring gently to avoid breaking the potatoes.
5. Crack the eggs into a bowl and whisk them lightly. Add salt and black pepper.
6. Once the potatoes and onion are cooked, drain any excess oil and mix them with the eggs. Stir well.
7. Pour the mixture back into the skillet and cook over medium heat for about 5-7 minutes, until the bottom is beautifully golden brown.
8. Carefully flip the tortilla using a plate and cook the other side for another 5-7 minutes.
9. When the tortilla is cooked, transfer it to a serving plate and let it cool slightly before slicing.
