A vibrant and flavorful salad featuring roasted carrots, perfect as a side dish or a light meal. Preparation Time: 10 minutes (plus 30 minutes roasting)

Ingredients
- 500 g carrots - 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp ground coriander
- 2 tbsp fresh parsley, chopped
- 1 tbsp honey
- 1 tbsp lemon juice
- Salt and black pepper to taste
- (Optional: roasted chickpeas for garnish)
Instructions
1. Peel and slice the carrots into thin rounds or strips. 2. Preheat the oven to 200°C (400°F).
3. Toss the carrots with olive oil, cumin, ground coriander, salt, and black pepper.
4. Spread the carrots on a baking sheet and roast for about 25-30 minutes until they are tender and slightly caramelized.
5. Allow the roasted carrots to cool for a few minutes.
6. Combine the cooled carrots with parsley, honey, and lemon juice in a bowl.
7. Serve immediately or let it marinate in the refrigerator before serving. Add roasted chickpeas if desired.
