Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli)
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 100 g spinach
- Salt and pepper to taste
- 50 g Parmesan cheese (or vegan alternative), grated
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and save a little pasta water.
2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3–4 minutes until soft.
3. Add the crushed garlic, bell pepper, and zucchini. Cook for about 5–7 minutes until the vegetables are tender.
4. Stir in the cherry tomatoes and spinach. Cook for an additional 2–3 minutes until the spinach wilts and the tomatoes begin to soften.
5. Toss in the cooked pasta and, if needed, a little reserved pasta water. Season with salt and pepper.
6. Serve the pasta on plates, topped with grated Parmesan cheese and fresh basil.
