A traditional Finnish Easter treat made from eggs and cream cheese, with a rich flavor profile enhanced by cooking the egg mixture.
Preparation Time: 1 hour
Serving Size: 6-8 servings

Ingredients:

- 4 eggs
- 1 dl sugar
- 1 tsp vanilla sugar
- 200 g plain cream cheese
- 1 dl cream
- 100 g raisins
- 100 g nuts (e.g., walnuts)
- 1 dl chocolate chips (optional)
- 1 tsp lemon juice
- A pinch of salt

Instructions:

1. Crack the eggs into a bowl and add the sugar and vanilla sugar. Whisk the mixture until it becomes light and fluffy.
2. Place the bowl over a double boiler and cook the mixture over low heat, stirring constantly, until it thickens (about 10-15 minutes). Remove from heat and allow to cool.
3. Once cooled, add the cream cheese, cream, raisins, nuts, chocolate chips (if using), lemon juice, and salt to the egg mixture. Mix well.
4. Pour the mixture into a mold and cover with plastic wrap. Let it set in the refrigerator for at least 4 hours or overnight.
5. Once set, unmold the pasha onto a serving plate and decorate with nuts or chocolate chips before serving, if desired.
