Ingredients:
- 1 egg
- 1/2 cup sugar
- 1/2 cup all-purpose flour
- 1/4 tsp baking powder
Filling:
- 4 gelatin sheets
- 2 cups heavy cream
- 2 tsp sugar (optional)
Instructions:
1. Preheat the oven to 350°F (175°C).
2. In a bowl, whisk the egg and sugar together until light and fluffy.
3. In a separate bowl, combine the flour and baking powder, then gently fold into the egg-sugar mixture until well combined.
4. Pour the batter into a parchment-lined baking dish and bake for about 15-20 minutes, or until golden brown and cooked through.
5. Allow the base to cool completely.
6. Soak the gelatin sheets in cold water for about 5-10 minutes.
7. Whip the heavy cream until soft peaks form, adding sugar if desired.
8. Heat a small amount of water in a saucepan and gently dissolve the soaked gelatin sheets in the warm water. Add the melted gelatin to the whipped cream and mix well.
9. Spread the cream filling over the cooled base and smooth the surface.
10. Let the pastry chill in the refrigerator for at least 2 hours before serving.
11. Cut into portions and enjoy!
