This rich and flavorful creamy mushroom soup is perfect as a starter or a light main dish. It comes together quickly and is a great way to utilize fresh mushrooms. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 400 g fresh mushrooms
- 1 onion
- 2 garlic cloves
- 2 tbsp butter
- 1 l vegetable broth
- 2 dl cream
- Salt and pepper to taste
- Fresh herbs (e.g., parsley or thyme) for garnish
Instructions:
1. Clean and slice the mushrooms. Peel and finely chop the onion and garlic cloves.
2. Heat the butter in a pot over medium heat. Add the onion and garlic, and sauté for about 5 minutes until softened.
3. Add the sliced mushrooms to the pot and continue cooking until they are soft and the liquid has evaporated.
4. Pour the vegetable broth over the mushroom mixture and simmer for about 10 minutes.
5. Blend the soup using an immersion blender until smooth.
6. Stir in the cream and heat the soup for a short while longer. Season with salt and pepper to taste.
7. Serve hot and garnish with fresh herbs.
