These small asparagus pastries make a delicious appetizer or the perfect side for a salad. Pair with a glass of sparkling wine for an exquisite flavor experience. Preparation Time: 30 minutes
Serving Size: 12 pastries
Ingredients:
- 250 g fresh asparagus - 1 packet puff pastry
- 1 dl crème fraîche
- 1 egg
- 50 g cheese (such as Parmesan or feta)
- Salt and pepper to taste
- A pinch of lemon zest (optional)
Instructions:
1. Preheat the oven to 200°C (400°F).2. Wash and cut the asparagus into 5 cm pieces.
3. Heat a little oil in a pan and sauté the asparagus for about 3-4 minutes until tender. Season with salt and pepper.
4. Roll out the puff pastry into a thin sheet and cut it into squares (about 10 cm x 10 cm).
5. Place a small spoonful of crème fraîche in the center of each square along with a few pieces of sautéed asparagus.
6. Grate cheese over the filling and add lemon zest if desired.
7. Fold the corners of the pastry towards the center and pinch tightly to seal.
8. Brush the pastries with beaten egg and place them on a baking sheet lined with parchment paper.
9. Bake in the oven for about 15-20 minutes until golden brown and crispy.
10. Serve warm with a sparkling drink.
