A delicious vegan dish that combines asparagus and tofu, flavored with Asian seasonings. Perfect for a spring meal!

Ingredients:

- 300 g firm tofu
- 3 cloves garlic
- 1 bunch asparagus
- 1 regular or shallot onion
- 3½ tablespoons soy sauce
- 1 teaspoon hoisin sauce
- 1 teaspoon mirin
- Black pepper
- ½ teaspoon + 4 tablespoons oil

Instructions:

1. Wash the asparagus and snap off any woody ends. Peel and slice the onion into rings. Crush the garlic cloves and cube the tofu.
2. Prepare the sauce: combine soy sauce, ½ teaspoon oil, and hoisin sauce in a bowl.
3. Heat 2 tablespoons of oil in a wok and sauté the garlic for about 15 seconds until it starts to color.
4. Add the tofu to the wok and stir. Add a tablespoon of sauce and fry for about 4 minutes until the tofu is browned.
5. Transfer the cooked tofu to a dish. Wipe the wok dry with a paper towel and heat 2 tablespoons of oil in it.
6. Sauté the onion rings until they are slightly browned. Add the asparagus and the remaining sauce. Then add the tofu and mix well.
7. Sprinkle with black pepper and let the mixture cook for 5-6 minutes. Add the mirin at the end.
8. Serve warm.
