Asparagus Soup (Parsakeitto)

A delightful spring dish that is quick to prepare and full of flavor. This asparagus soup is perfect as an appetizer or a light main course. Preparation Time: 30 minutes
Serving Size: 4-6 servings
Ingredients:
- 500 g asparagus- 1 tbsp butter
- 2 shallots
- 500 ml vegetable broth
- 200 ml sour cream
- 100 ml white wine
- Salt (to taste)
- Fresh tarragon for garnish
Instructions:
1. Prepare the vegetable broth by dissolving 2 vegetable stock cubes in 500 ml of water.2. Chop the asparagus and shallots into small pieces.
3. In a pot, melt the butter and sauté the shallots until translucent.
4. Add the chopped asparagus to the pot and pour in the vegetable broth. Allow it to simmer on low heat for about 15 minutes.
5. Blend the soup using an immersion blender or a regular blender until smooth.
6. Reheat the soup and stir in the white wine and sour cream. Mix well.
7. Serve the soup in bowls and garnish with fresh tarragon leaves and asparagus tips.
