Spring Asparagus Soup

A refined dish perfect as a starter for special occasions. This soup is both delicious and nutritious.

Ingredients:
- 500 g green asparagus
- 1 onion
- 2 garlic cloves
- 4 dl vegetable broth
- 2 dl cream
- 2 tbsp butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Wash and peel the asparagus if necessary. Cut into approximately 3 cm pieces.
2. Finely chop the onion and garlic.
3. In a pot, heat the butter and sauté the onion and garlic until soft.
4. Add the asparagus to the pot and sauté for a moment.
5. Pour in the vegetable broth and cook until the asparagus is tender, about 10-15 minutes.
6. Blend the soup with an immersion blender or in a regular blender until smooth.
7. Stir in the cream and mix well. Heat the soup again but do not bring to a boil.
8. Season with salt and pepper.
9. Serve hot, garnished with fresh parsley.
