Asparagus Soup with Mint Cream and Onion Spirals

A delicious spring dish featuring creamy asparagus soup finished with refreshing mint cream, complemented by flavorful onion spirals. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 500 g fresh asparagus
- 1 onion
- 2 garlic cloves
- 1 potato
- 1 l vegetable broth
- 200 ml cream
- 1/2 dl fresh mint
- Salt and pepper to taste
- 1 tbsp olive oil
- 100 g fresh chives
- 1 package puff pastry
Instructions:
1. Peel and chop the onion, garlic, and potato.
2. Cut the asparagus into small pieces, saving the tips for garnish.
3. Heat the olive oil in a pot and sauté the onion and garlic until soft.
4. Add the potato cubes and asparagus to the pot, then pour over the vegetable broth.
5. Cook for about 15-20 minutes until the vegetables are tender.
6. Blend the soup with an immersion blender until smooth.
7. Stir in the cream and chopped mint, mixing well. Season with salt and pepper.
8. For the onion spirals: Roll out the puff pastry into a thin sheet and evenly spread the chives over the top.
9. Roll the pastry tightly into a log and slice into rounds.
10. Bake the onion spirals at 200°C for about 15 minutes until golden brown.
11. Serve the asparagus soup hot, garnished with asparagus tips and a dollop of mint cream. Enjoy with the onion spirals.
