Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., fusilli or penne) - 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 zucchini, diced
- 1 bell pepper, diced
- 200 g mushrooms, sliced
- 200 ml vegetable cream
- 2 tablespoons soy sauce
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and reserve a little cooking water. 2. Heat olive oil in a large skillet over medium heat. Add the onion and garlic, sauté for about 2-3 minutes.
3. Add the zucchini, bell pepper, and mushrooms. Sauté until the vegetables are tender, about 5-7 minutes.
4. Pour in the vegetable cream and soy sauce. Mix well and heat gently.
5. Add the cooked pasta to the skillet. Stir and, if needed, add a little reserved cooking water to achieve a creamy consistency.
6. Season with salt and pepper. Serve with fresh basil on top.
