Ingredients
- 25 g fresh coriander (leaves and stems)- Pinch of salt and pepper
- 125 g couscous
- 2 tsp ground coriander
- Splash of olive oil (not extra virgin), for frying
- Pinch of sea salt flakes and black pepper
- 2 green chilies, seeded and diced
- 2 tbsp olive oil
- 8 lamb chops
- 4 tbsp olive oil
Instructions
1. Prepare the couscous: Boil water and add 125 g couscous, ground coriander, and a pinch of salt. Cover and let it steam for about 5 minutes. Stir in 2 tbsp olive oil and finely chopped coriander.2. Season the lamb chops with salt, pepper, and diced chilies.
3. Heat a frying pan and add a splash of olive oil. Cook the lamb chops over medium heat for about 4-5 minutes on each side or until cooked to your liking.
4. Serve the grilled lamb chops with harissa couscous. You can garnish the dish with additional fresh coriander.
