A delightful and spring-inspired brunch that brings joy and color to your Easter table. Preparation time is about 30 minutes and serves 4.Ingredients:
- 4 eggs
- 1 avocado
- 150 g cream cheese
- 1 dl fresh herbs (e.g. basil, parsley)
- Juice of 1 lemon
- 1/2 tsp salt
- 1/2 tsp black pepper
- 8 slices whole grain bread
- 200 g fresh berries (e.g. strawberries, blueberries)
Instructions:
1. Boil the eggs to your desired consistency (e.g., 8-10 minutes for hard-boiled).
2. Meanwhile, peel and slice the avocado.
3. In a bowl, mix the cream cheese, chopped herbs, lemon juice, salt, and pepper.
4. Toast the whole grain bread slices if desired.
5. Once the eggs are ready, peel them and cut in half.
6. Assemble the brunch: spread the cream cheese mixture on the bread, add avocado slices, and top with egg halves.
7. Garnish the dishes with fresh berries.
8. Serve immediately and enjoy!
