Creamy Mushroom Soup

Serving Size: 4 servings
Ingredients:
- 400 g fresh mushrooms- 1 large onion
- 2 cloves garlic
- 2 tbsp butter
- 1 liter vegetable broth
- 200 ml cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Clean and slice the mushrooms. Finely chop the onion and garlic.2. In a pot, melt the butter over medium heat. Add the onion and garlic, and sauté until soft.
3. Add the sliced mushrooms to the pot and cook until they are slightly browned.
4. Pour in the vegetable broth and let the soup simmer for about 15 minutes.
5. Use an immersion blender to puree the soup until smooth, or leave some texture if desired.
6. Stir in the cream and season with salt and pepper. Heat the soup again, but do not bring it to a boil.
7. Serve the soup garnished with fresh parsley.
