Ingredients:

- 800 g Ratte potatoes
- 4 tbsp olive oil
- Salt to taste
- 1 tsp black pepper
- 1 tsp paprika powder
For the Mojo Sauce:
- 1 dl olive oil
- 2 garlic cloves, crushed
- 1 tsp salt
- 1 tsp cumin
- 1 tbsp red wine vinegar
- 1/2 dl fresh parsley, finely chopped
- 1/2 dl fresh coriander, finely chopped (optional)
- Juice of 1 lime

Instructions:

1. Peel and boil the Ratte potatoes in salted water for about 15 minutes, until tender but still firm.
2. Drain the potatoes and let them cool slightly.
3. Preheat the oven to 200 °C (392 °F).
4. In a large bowl, mix together the olive oil, salt, black pepper, and paprika powder.
5. Add the potatoes to the bowl and toss them in the oil mixture until evenly coated.
6. Spread the potatoes on a baking sheet and roast in the oven for about 15-20 minutes or until golden brown and crispy.
7. Prepare the Mojo sauce: In a bowl, combine all the sauce ingredients and mix well.
8. Serve the crispy Ratte potatoes with the Mojo sauce and enjoy with friends.
