Ingredients:
- 500 g new potatoes - 200 g padron peppers
- 300 g veggie chicken (e.g., soy-based or seitan)
- 4 tbsp olive oil
- Salt to taste
Mojo Rojo Sauce:
- 2 roasted red peppers
- 2 garlic cloves
- 1 tsp paprika
- 1/2 tsp cumin
- 4 tbsp olive oil
- 1 tbsp red wine vinegar
- Salt and pepper to taste
Instructions:
1. Boil the new potatoes in salted water until tender, about 15-20 minutes. Drain and let cool. 2. Thread the cooked potatoes, padron peppers, and veggie chicken onto skewers.
3. Brush the skewers with olive oil and sprinkle with salt.
4. Grill the skewers on a hot grill for about 10-15 minutes until golden brown and crispy.
5. Prepare the mojo rojo sauce: Blend all sauce ingredients in a blender until smooth. Season with salt and pepper.
