Serving Size: Serves 4-6
Ingredients:
- 500 g beef
- 2 tbsp olive oil
- 1 large onion
- 2 garlic cloves
- 3 medium potatoes
- 2 carrots
- 1 red bell pepper
- 1 can (400 g) crushed tomatoes
- 2 dl beef broth
- 1 tbsp balsamic vinegar
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- Fresh parsley for garnish
Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add diced beef and cook until browned. Remove the beef from the pot and set aside.
3. Add chopped onion and garlic to the pot, sauté until soft.
4. Peel and dice the potatoes and carrots, and chop the bell pepper. Add the vegetables to the pot and sauté for a few minutes.
5. Stir in the crushed tomatoes, beef broth, cooked beef, balsamic vinegar, thyme, salt, and pepper. Mix well.
6. Bring the stew to a simmer, cover, and cook on low heat for about 1 hour, until the meat is tender and the vegetables are cooked.
7. Serve warm and garnish with fresh parsley.
