Baked Potatoes with Ham Filling

Delicious baked potatoes filled with a spicy ham and horseradish cream cheese mixture. A perfect way to use up leftover holiday ham! Preparation Time: 1 hour
Serving Size: 4
Ingredients:
- 4 large potatoes - 200 g holiday ham, chopped
- 100 g horseradish cream cheese
- 1 dl heavy cream
- 1 dl grated cheese (e.g. cheddar)
- Salt and pepper to taste
- Fresh chives or parsley for garnish
Instructions:
1. Preheat the oven to 200°C (390°F). 2. Wash the potatoes thoroughly and poke holes in them with a fork. Wrap the potatoes in foil and bake in the oven for about 45-60 minutes until soft.
3. Prepare the ham filling: In a bowl, mix the chopped ham, horseradish cream cheese, heavy cream, and season with salt and pepper.
4. Remove the potatoes from the oven and let them cool slightly. Cut a lengthwise slit in each potato and carefully scoop out some of the flesh.
5. Mix the scooped potato flesh into the ham filling and fill the mixture back into the potatoes.
6. Sprinkle grated cheese on top of the stuffed potatoes.
7. Bake the stuffed potatoes in the oven for about 10-15 minutes until the cheese is melted and golden brown.
8. Garnish with fresh chives or parsley before serving.
