Ingredients:
- 2 dl rice porridge - 4 dl coconut milk
- 1 dl sugar
- 1 tsp vanilla sugar
- 1 dl gingerbread spice
- 2 dl all-purpose flour
- 2 dl milk
- 2 eggs
- 1 dl melted butter
- 1 tsp baking powder
- 1/2 tsp salt
- Fresh berries (e.g., strawberries, blueberries) for serving
- Maple syrup for serving
Instructions:
1. Cook the rice porridge in coconut milk over low heat for about 30 minutes or until the rice is tender.2. Stir in the sugar and vanilla sugar into the rice porridge and mix well. Let it cool slightly.
3. Meanwhile, prepare the gingerbread waffles: In a bowl, combine the flour, gingerbread spice, baking powder, and salt.
4. Add the eggs, milk, and melted butter to the dry ingredients. Mix until a smooth batter forms.
5. Preheat a waffle iron and pour the batter into the iron. Cook the waffles for about 3-4 minutes or until golden brown.
6. Serve the rice porridge with fresh berries and maple syrup. You can also add the waffles to the table.
