Fried Baltic Herring (Paistetut Silakat)

A delicious and traditional Finnish dish that can be prepared quickly. Perfect for a weekend treat or a weekday meal. Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 3 tablespoons butter or margarine
- 600 g cleaned Baltic herring
- 1.5 teaspoons salt
- 1.5 dl rye flour
Instructions:
1. Rinse the herring quickly in cold water and drain well.
2. Mix the salt and rye flour together in a bowl.
3. Dredge the herring in the salt and flour mixture until well coated.
4. Melt the butter or margarine in a frying pan over medium heat.
5. Fry the herring in the pan for 2-3 minutes on each side, until golden brown.
6. Serve the herring with boiled potatoes.
