Ingredients:
- 6 eggs - 1 red bell pepper
- 1 green bell pepper
- 1 small onion
- 1-2 chilies (to taste)
- 1 cup milk
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions:
1. Chop the red and green bell peppers and onion into small cubes.2. Finely chop the chilies and remove seeds if you prefer less heat.
3. Heat olive oil in a frying pan over medium heat.
4. Add the chopped vegetables to the pan and sauté for about 5 minutes until they soften.
5. Crack the eggs into a bowl and add milk, salt, and pepper. Whisk the mixture well.
6. Pour the egg mixture over the sautéed vegetables in the pan.
7. Cook the omelette on low heat until the top is nearly set.
8. Carefully flip the omelette and cook the other side for an additional 2-3 minutes.
9. Serve warm, garnished with fresh parsley if desired.
